🌮 Hearty Breakfast Tacos with Italian Sausage, Eggs & Potatoes

Ingredients (Serves 2–3)

  • 4 small tortillas (flour or corn)
  • ½ lb Italian sausage (mild or spicy)
  • 4 large eggs, whisked
  • 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)
  • 1 cup diced potatoes (fresh or frozen)
  • ¼ cup diced onions
  • Seasonings:
    • ½ tsp Season-All
    • ¼ tsp Red Pepper Flakes (adjust for spice)
    • ½ tsp Garlic Salt
    • ¼ tsp Black Pepper
  • Oil or butter, for cooking

Instructions

  1. Cook the Potatoes (I used an air fryer)
    • Heat a little oil in a skillet over medium heat.
    • Add the diced potatoes and onions.
    • Season with Season-All, garlic salt, and pepper.
    • Sauté until the potatoes are golden and tender (about 8–10 minutes).
    • Remove and set aside.
  2. Cook the Sausage
    • In the same skillet, add the Italian sausage.
    • Cook until browned and fully cooked through (about 6–7 minutes).
    • Drain excess grease if needed.
    • Add red pepper flakes for a little kick.
    • Stir in the cooked potatoes and onions to combine.
  3. Scramble the Eggs
    • Push the sausage mixture to one side of the pan (or remove it).
    • Melt a bit of butter or add oil to the empty side.
    • Pour in the whisked eggs and cook, gently stirring until scrambled and fluffy.
    • Mix the eggs into the sausage and potato mixture.
  4. Warm the Tortillas
    • Heat tortillas in a clean skillet or directly over the flame for a few seconds per side until warm and slightly charred.
  5. Assemble the Tacos
    • Spoon the sausage–egg–potato mixture into each tortilla.
    • Sprinkle shredded cheese on top (it’ll melt right in).
    • Optionally, garnish with extra red pepper flakes or a drizzle of hot sauce.

Optional Add-Ons

  • Fresh cilantro, avocado slices, or salsa on top.
  • Add a dollop of sour cream or spicy mayo for extra creaminess.
