







🌮 Hearty Breakfast Tacos with Italian Sausage, Eggs & Potatoes
Ingredients (Serves 2–3)
- 4 small tortillas (flour or corn)
- ½ lb Italian sausage (mild or spicy)
- 4 large eggs, whisked
- 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)
- 1 cup diced potatoes (fresh or frozen)
- ¼ cup diced onions
- Seasonings:
- ½ tsp Season-All
- ¼ tsp Red Pepper Flakes (adjust for spice)
- ½ tsp Garlic Salt
- ¼ tsp Black Pepper
- Oil or butter, for cooking
Instructions
- Cook the Potatoes (I used an air fryer)
- Heat a little oil in a skillet over medium heat.
- Add the diced potatoes and onions.
- Season with Season-All, garlic salt, and pepper.
- Sauté until the potatoes are golden and tender (about 8–10 minutes).
- Remove and set aside.
- Cook the Sausage
- In the same skillet, add the Italian sausage.
- Cook until browned and fully cooked through (about 6–7 minutes).
- Drain excess grease if needed.
- Add red pepper flakes for a little kick.
- Stir in the cooked potatoes and onions to combine.
- Scramble the Eggs
- Push the sausage mixture to one side of the pan (or remove it).
- Melt a bit of butter or add oil to the empty side.
- Pour in the whisked eggs and cook, gently stirring until scrambled and fluffy.
- Mix the eggs into the sausage and potato mixture.
- Warm the Tortillas
- Heat tortillas in a clean skillet or directly over the flame for a few seconds per side until warm and slightly charred.
- Assemble the Tacos
- Spoon the sausage–egg–potato mixture into each tortilla.
- Sprinkle shredded cheese on top (it’ll melt right in).
- Optionally, garnish with extra red pepper flakes or a drizzle of hot sauce.
Optional Add-Ons
- Fresh cilantro, avocado slices, or salsa on top.
- Add a dollop of sour cream or spicy mayo for extra creaminess.
